Title: Satsabeli (Vegetable Sauce)
Categories: Jewish Georgian Israel Info Condiment
Yield: 2 Qts
2 | lb | Ripe tomatoes |
2 | lb | Sweet red pepper |
1/2 | lb | Large garlic cloves, peeled |
2 | ts | ;Salt |
This is a powerful sauce & I suggest that you prepare a half recipe or less unless you intend to use it daily.
1. Process or grind tomatoes, peppers, & garlic together. Add salt & mix well. 2. Store in a jar w/tight cover, refrigerated, or on kitchen shelf. Serve as a condiment w/Georgian food & especially cooked dumplings. The satsabeli is also added to meat dishes to enhance existing seasonings.
