SEPHARDIM, SEPHARDIC Separdim are descendants of Jews who lived in the Iberian Peninsula for centuries before expulsion from Spain in 1492 and Portugal in 1497. Those who refused conversion to Christianity were burned at stake as heretics. Others converted in name only but continued their Judaic religion secretly. As many as 250,000 fled to North Africa and Middle East, especially to Turkey where they were welcomed by Ottoman Emperor, Sultan Beyazit II.

The Spanish Jews had been in touch with center of Jewish life in Babylonia (Iraq). The Babylonian Talmud was for them ultimate authority in belief and practice of Judaism.

The Sephardic Diaspora was a 15th- & 16th-century emigration. The Jews took with them language, Judeo-Spanish or Ladino as it became known, and songs and foods of Spain. The traditions, customs, and especially their eating habits were integrated into food of their new homes.
