1 | lb | Pinto beans, don't drain |
4 | Eggs | |
3 | c | Sugar |
1 | c | Shredded coconut |
1 | c | Chopped pecans |
2 | Unbaked pie shells |
Blend together pinto beans and eggs in food processor for about 1 minute. Add sugar, coconut and pecans. Pour into unbaked pie shell. Bake at 350 degrees for 50 to 55 minutes. Randy Rigg
