2 | Medium cucumbers, peeled | |
And cut into 1/4-inch slices | ||
2 | Eggs, beaten | |
1 1/2 | c | Fine dry breadcrumbs |
Vegetable oil |
Dip cucumber slices inegg, dredge in breadcrumbs. Fry cucumber slices in hot oil (375F.) in a skillet until browned, turning once. Drain well on paper towels.
Serving Suggestions: Oklahoma-Style Fried Cucumbers may be served with any of the following: Dill Sauce, Horseradish Sauce, Mustard Dip Sauce, or any sour cream sauce.
