Title: Crema De Aguacate (Cream of Avocado Soup)

2 | lg | Ripe avocados, seeded and peeled |
1/2 | ts | Salt |
1 | c | Half and half |
2 | ts | Lemon juice |
2 | c | Chicken broth |
1/4 | c | Dry sherry |
Place avocados, salt, cream, and lemon juice into blender. Blend to a smooth pur‚e.
Heat chicken broth. Pour pur‚e into warmed bowls or tureen, slowly add hot broth. Add sherry.
Garnish with a thin slice of lime, avocado, or sprig of cilantro or dab of sour cream.
Serve warm or chilled. To reheat, use a double boiler.
