Title: Zucchini Salad

Yield: 4 Servings
8 | md | Zucchini |
1 | md | Onion |
1 | Garlic clove | |
6 | tb | Vegetable oil |
2 | tb | White wine vinegar |
Lettuce leaves | ||
1 | tb | Capers |
1 | ts | Parsley, chopped |
1 | ts | Marjoram, chopped |
Salt & pepper |
Wash & dry the zucchini. Do not peel them, but cut across into 1/2" slices. Put into boiling salted water & then simmer for 10 minutes. Drain very well & place in a bowl.
Chop the onion & garlic finely & sprinkle over the zucchini. Mix together the oil & vinegar & pour this over the zucchini. Cover & let stand for 2 hours.
Arrange a bed of lettuce leaves on a serving dish. Drain the zucchini, retaining the liquid & arrange them on the lettuce.
Mix the drained liquid with the capers, herbs, salt & pepper. Pour over the zucchini. Chill for 30 minutes before serving.
