Title: Sweet and Sour Vidalia Onions

Yield: 6 Servings
1 1/2 | c | Onions (Vidalia, Texas 1015, |
. or Walla Walla), sliced | ||
3 | c | Cucumbers, peeled, seeded, |
. thinly sliced | ||
1/2 | c | Carrots, grated |
1/2 | c | White wine vinegar |
1/4 | c | Sugar |
2 | tb | Fresh dill, minced |
1/2 | ts | Salt |
1/4 | ts | Black pepper |
Toss onions, cucumbers and carrots together in a bowl.
Combine remaining ingredients and pour over vegetables. Toss to coat.
Refrigerate for at least two hours before serving.
