Title: Mesculin Salad W/ Tarragon Vinaigrette

Yield: 6 Servings
3 | qt | Mixed salad greens |
3 | tb | White wine vinegar |
2 | tb | Tarragon leaves; minced |
1 | tb | Balsamic vinegar |
2 | ts | Dijon mustard |
2 | ts | Honey |
. *OR* | ||
1 | tb | Orange marmalade |
1/4 | ts | Pepper |
1/3 | c | Olive or walnut oil |
Wash greens and spin or pat dry.
Chill. Whisk vinegars, tarragon, mustard, honey and pepper in a small bowl. Slowly whisk in the oil.
