Title: Mock Tomato Sauce

Yield: 4 Servings
12 | oz | Tomato paste -- 2-6 oz cans |
3 | c | Water |
1/4 | c | Chopped onion -- finely |
Chopped | ||
1 | Clove garlic -- minced | |
2 | tb | Fresh lemon juice |
1 | ds | Hot pepper sauce |
1/4 | ts | Basil |
1/8 | ts | Black pepper -- freshly |
Ground | ||
Dried thyme -- to taste | ||
(optional) |
In a medium saucepan combine all ingredients and mix well. Place over medium-high heat and bring to a boil. Reduce heat cover and simmer 30 minutes, stirring occasionally. Makes 4 cups. Use in any recipe requiring tomato sauce.
May be stored in a covered container in refrigerator for 1 week. For longer storage, freeze in small quantities for use as needed.
