Title: Ginger Orange Carrots T>

1 1/4lbCarrots -- Peel, Cut In
  Diagonal Slices
1tsOrange Peel -- Freshly
  Grated
1/4cFresh Orange Juice
2tsMargarine -- *Note
2tsHoney
1tsGrated Ginger root
1/4tsSalt

*NOTE: The original recipe called for butter or margarine. I used a lower fat margarine.

Place carrots in a large skillet, cover with water and bring to a boil. Reduce heat, cover and simmer until crisp-tender, about 3 minutes. Pour off water leaving carrots in pan.

Add remaining ingredients and stir over medium-heat until carrots are glazed, 1 to 2 minutes.

These were *really* good.
