Title: Ginger Orange Carrots

1 1/4 | lb | Carrots -- Peel, Cut In |
Diagonal Slices | ||
1 | ts | Orange Peel -- Freshly |
Grated | ||
1/4 | c | Fresh Orange Juice |
2 | ts | Margarine -- *Note |
2 | ts | Honey |
1 | ts | Grated Ginger root |
1/4 | ts | Salt |
*NOTE: The original recipe called for butter or margarine. I used a lower fat margarine.
Place carrots in a large skillet, cover with water and bring to a boil. Reduce heat, cover and simmer until crisp-tender, about 3 minutes. Pour off water leaving carrots in pan.
Add remaining ingredients and stir over medium-heat until carrots are glazed, 1 to 2 minutes.
