1/2 | c | Raw Brown Rice |
1 | Onion, chopped | |
1 | tb | Oil |
2 | c | Liquid (water, stock) |
1/2 | c | Tomato juice |
1 | tb | Tamari soy sauce |
1 | Potato, diced | |
1 | Tomato, diced | |
1 | Carrot, sliced | |
1 | Celery Stalk, sliced | |
Wheat Germ | ||
Dry Milk Powder (optional) | ||
Oil for frying | ||
FIXINGS | ||
Pita Bread | ||
Lettuce, shredded | ||
Onions, thinly sliced | ||
Tomatoes, sliced | ||
Cheese, sliced | ||

Put lentils, rice, onion, oil and liquids into 2-qt. pot. Bring to a boil, cover and simmer 30 minutes. Add vegetables. Bring to a boil, covered and simmer 30 minutes longer. Now if it's been that kind of day, call it quits at this point and serve Lentil Stew! Protein: 41.2 grams; Calories: 1052
On better days, mash stew, shape into patties, attain proper consistency by adding liquid, or wheat germ and dry milk. Coat patties with wheat germ. Brown in hot oil, 5 minutes per side. Tuck one patty in each pita, add "fixings" and pass the catsup!
Kids love this supper. It's nutritious, inexpensive and meatless.
