Title: Rice Pilaf with Peppers and Pine Nuts

Yield: 4 Servings
2 | tb | Butter |
8 | Garlic clove(s) peeled, thinly sliced | |
2 | c | Chicken stock |
1 | c | Long-grain rice |
1/2 | c | Red bell pepper finely diced |
1/4 | c | Pine nuts, toasted |
In medium saucepan, melt butter over medium heat. Add garlic and saute about 1 min, stirring constantly. Add stock and bring to boil. Stir in rice. When mixture returns to boil, reduce heat, cover, and simmer for 15 min. Stir in peppers and pine nuts, cover, and simmer for 5 min more. Season with salt and pepper to taste.
