Title: Fried Swiss Chard

2 | lb | Fresh Swiss Chard |
6 | tb | Vegetable oil pinch of turmeric |
3/4 | ts | Ground cummin |
1/2 | ts | Ground coriander |
1/2 | ts | Salt |
1/4 | c | Chopped peanuts |
Wash and finely chop Swiss chard. Boil 1/4 cup water. Add chopped chard, cover, and cook about 6 minutes or until tender. Drain well.
Heat vegetable oil in a skillet and add turmeric, ground cumin, coriander and salt. Add chard and continue cooking and stirring, over medium-low heat, about 5 more minutes.
Stir in peanuts, and cook slowly for about 2 minutes. Remove from heat and serve. 4 - 6 servings
