For a milder floavor, chilies are often roasted and peeled. To roast, bake in a shallow pan at 400! F for 25 minutes, until skin is brown and blistered. Remove from oven and place in plastic bag for 30 minutes to cool. Pull off skins and remove seeds and stems.
