Title: Peta Sloppy Joes

Yield: 4 Servings
2 | tb | Margerine; or water |
1/2 | c | Onion; minced |
1/2 | c | Green pepper; minced |
1 | lb | Firm tofu; patted dry and mashed |
6 | tb | Ketchup |
6 | tb | Chili sauce |
1/2 | ts | Salt |
;pepper to taste | ||
4 | Burger buns; lightly toasted |
Heat the margerine or water in a large skillet over med heat. Add the onion and green pepper and saute or broil until the veggies are well cooked, about 5 mins. Add the mashed tofu and saute for another 15 mins, until the tofu is completely cooked.
Add the ketchup, chili sauce, salt, and pepper and continue to cook over low heat until the mixture is heated thru. Add a little water if the mixture is too dry.
