Title: Millet Pudding - Joann Rachor

1 | c | Hot pineapple juice |
1 | c | HOT COOKED MILLET, packed |
2 | tb | Cashews |
1/8 | ts | Salt |
1 | ts | Vanilla |
BLEND smooth all ingredients. Ways to serve: sprinkle 1/4-1/2" GRANOLA in bottom of a flat dish. Pour pudding over, 1-2" thick. Add FRUIT TOPPING portion of the TOFU CHEESECAKE for recipe before serving. Or, serve over WAFFLES, FRENCH TOAST or cereal. May stir in 1/2-1 cup fruit--drained pineapple chunks, banana slices, berries, etc.
