Title: Savory Beans & Rice - Joann Rachor

Yield: 1 Servings
1 1/2 | c | Dried beans |
3 3/4 | c | Water |
1/2 | c | Chopped onion |
1/2 | c | Chopped green pepper |
1 | cl | Garlic, minced |
2 | Bay leaf | |
1 1/2 | ts | Salt |
1 1/2 | ts | Onion powder |
1 | ts | Cumin, optional |
Soak, wash and soak beans in 6 cups water 6-8 hours. Drain off water. Bring to a boil water from the recipe with the soaked beans. Cook beans until tender, 2-3 hours depending on the type of bean used. After beans are tender, add remaining ingredients. Cook an additional 30 minutes. Serve over brown rice.
