Title: Hot Cottage Cheese Balls

1 | c | Cottage cheese |
1/2 | ts | Salt |
2 | tb | Tomato catsup |
1/2 | ts | Grated onion |
1 | Egg white, beaten | |
Cracker crumbs |
Press cottage cheese through a sieve; add seasoning, fold in stiffly beaten egg white and form into tiny balls, using about 1 tsp for each. Roll in finely crushed cracker crumbs and fry quickly in hot oil, 390 degrees, until golden brown. Drain and serve hot as horsdoeuvres or as a salad accompaniment. Randy Rigg
