Title: Virgina Spoon Bread

Yield: 3 Servings
1 | c | Corn meal |
1 | ts | Salt |
2 | c | Milk, scalded |
2 1/2 | ts | Baking powder |
2 | Eggs, separated |
Mix corn meal and salt; stir into hot milk and cook over low heat until thick and smooth. Stir occasionally. Cool slightly. Stir in baking powder and well beaten egg yolk. Fold in stiffly beaten egg whites. Turn into well greased casserole. Bake at 375 degrees for 35 minutes or until firm and crusty. Randy Rigg
