Title: Chicken and Cucumber Soba

1/4 | c | Dijon mustard |
2 | tb | Soy sauce |
2 | tb | Rice wine vinegar |
3 | tb | Oil |
1 | tb | Minced ginger |
4 | Green onions, sliced | |
2 | Cucumbers, peeled, seeded, | |
Cut into 1/4 by 3 inch | ||
Strips | ||
2 | c | Cooked chicken strips, 1/4 |

Bring a large pot of salted water to a boil. Add the soba, return to a boil, and cook until barely tender, about 6 minutes. Drain and set aside.
In a small bowl, mix together the mustard, soy, and vinegar. Set aside.
Heat the oil in a wok over high heat. Add the ginger and cook, stirring, for 10 to 15 seconds. Add the green onions and cook for 10 seconds. Toss in the cucumbes and chicken, and cook for another 10 seconds, then add the mustard /soy mixture. Simmer for about 1 minute and add the soba. Toss and cook for 1 minute longer. Serve hot. Serves 2.
