Title: Ginger Noodles ( Stop the Insanity! )

4 | oz | Asian noodles (not italian) or 1/2lb. fresh chinese |
2 | ts | Vegetable or sesame oil |
2 | ts | Grated fresh ginger |
6 | Scallions; sliced | |
1 | c | Snow peas (about 20) |
2 | ts | Soy sauce |
: Cook the noodles and drain well (rinse with cold water if cooking them well ahead of time). Heat the oil in a wok or heavy skillet and saute the ginger until it starts to change color, but don't let it burn. Add the scallions and saute until wilted. Stir in the noodles and soy sauce, and toss until the noodles are lightly coated. *** on noodles....good ones are chinese flat noodles, udon, soba, or rice Serves 2.
