4ozAsian noodles (not italian) or 1/2lb. fresh chinese
2tsVegetable or sesame oil
2tsGrated fresh ginger
6 Scallions; sliced
1cSnow peas (about 20)
2tsSoy sauce

: Cook the noodles and drain well (rinse with cold water if cooking them well ahead of time). Heat the oil in a wok or heavy skillet and saute the ginger until it starts to change color, but don't let it burn. Add the scallions and saute until wilted. Stir in the noodles and soy sauce, and toss until the noodles are lightly coated. *** on noodles....good ones are chinese flat noodles, udon, soba, or rice Serves 2.
