SALAD |
4 | c | Shredded green cabbage |
1/4 | c | Shredded red cabbage |
1/4 | c | Chopped red onion |
2 | | Jalapeno chiles, seeded and finely chopped |
2 | tb | Chopped fresh cilantro |
11 | oz | Can Mexicorn, drained |
4 | oz | Shredded cheddar cheese |
| | Fresh cilantro sprigs |
DRESSING |
3/4 | c | Ranch salad dressing |
1 | tb | Fresh lime juice |
1 | ts | Cumin |
In a large bowl, combine all salad ingredients except cilantro sprigs. Mix
well. In a small bowl, combine all dressing ingredients and blend well.
Pour over salad and toss to coat. Serve immediately or chill until serving
time. Garnish with cilantro sprigs.
