1 Fat back
2tsBlack pepper
1tbGarlic -- minced
2tbSambuca -- or pernod
4tsKosher salt
1/4cWater
2tbFennel seed
 mdHog casings

Grind the meat, fat, spices. Mix well to blend the spices, add the water to help with blending. Pipe into casings.
