Title: Irish Trifle Ala Bobbi

1 | 4.4oz vanilla pudding | |
3/4 | c | Raspberry OR strawberry |
Preserves | ||
2 | 10 oz pk frozen raspberries | |
Or strawberries | ||
1 | Reduced fat pound cake, 16oz | |
Cut in slim slices | ||
3/4 | c | Cream sherry |
1 1/4 | c | Light Cool Whip |
This is a variation of an Irish recipe I had, where I cut back the fat grams to suit my diet.
Prepare the vanilla pudding, using 1% fat free milk (it will not be as thick as using regular milk, but for this dessert it doesn't matter.) Cool. Using a pretty glass bowl, place slices of cake on bottom. (You may also use ladyfingers if you desire) Combine the raspberries, raspberry preserves, and cream sherry together. Blend well. Pour some raspberry mixture over the cake. (I used a ladle) Then pour some pudding mixture. Repeat alternating mixtures, cake, pudding two more times. Chill. This can be made a day ahead. Just before serving, top with Lite Cool Whip. It is a pretty dessert, popular in Ireland, but I just made it a little less fattening!
