A skirling pan is a frying pan.
And "Skirlie in the pan" is a side dish made by frying chopped onion in bacon fat, and adding some oatmeal (I don't know whether the oatmeal was cooked in any other way.)
She cooks it with Bacon and Eggs, but knows it under the name of "Creeshie (greasy) Mealie".
