Cut heads off, clean and wipe dry. Fry out liberal amount of pork fat. Roll in flour with a little salt and touch of garlic powder. Drop in fry-pan when fat comes to a boil. Turn often to avoid burning. Fry SLOWLY until every trout is crisp and well browned. : Place in hot platter on clean paper towel to absorb fat. Serve with cut lemon on the side.
