Title: Spicy Maple Basting Sauce for Grilled Lake Trout

Yield: 4 Servings

1/4cMaple syrup
1/2cWater
1tbVinegar; white or raspberry
1 Inch ginger root; peeled and minced
1clGarlic; minced
1/2tsDried hot red pepper flakes
1pnSalt

Combine all the ingredients in a small heavy saucepan and simmer until reduced to about 1/2 cup. Cool and pour over the fish as a marinade for 20-40 min. Turn the fish once to ensure both sides soak in the flavor. Drain and reserve for brushing on during grilling.
