Title: Spicy Maple Basting Sauce for Grilled Lake Trout

1/4 | c | Maple syrup |
1/2 | c | Water |
1 | tb | Vinegar; white or raspberry |
1 | Inch ginger root; peeled and minced | |
1 | cl | Garlic; minced |
1/2 | ts | Dried hot red pepper flakes |
1 | pn | Salt |
Combine all the ingredients in a small heavy saucepan and simmer until reduced to about 1/2 cup. Cool and pour over the fish as a marinade for 20-40 min. Turn the fish once to ensure both sides soak in the flavor. Drain and reserve for brushing on during grilling.
