Title: Corn Relish (Rice)

10cFresh whole kernel corn
1smHead cabbage, shredded
6mdOnions, chopped
4mdGreen peppers, chopped
2mdSweet red peppers, chopped
1qtCider vinegar
4cSugar
2 1/2tsGround turmeric
2 1/2tsDry mustard
2tsCelery seed
2tsSalt

In a large Dutch oven, combine corn, cabbage, onions and peppers. In a bowl, stir together remaining ingredients. Pour over vegetables. Bring to a boil; reduce heat and simmer for 10 minutes. Ladle into hot sterilized jars, leaving 1/4-in. headspace. Adjust caps. Process in ~ boiling-water bath for 10 minutes. Let stand at lease one week to blend flavors Yeald: About 14 Jars
