Title: Nuoc Cham Thong Dung (Spring Roll Dipping Sauce)

1 Clove of garlic
4tbFish sauce
4tbLime (or lemon) juice
3tbSugar (or less to taste)
4 Hot red or green chillies.

peel and crush the garlic. Combine with the fish sauce, lime or lemon juice, sugar and 4 tablespoons of water. Mix well and pour into 4 individual serving bowls. Slice the chillies crossways into fine rounds, and divide them between the bowls.
