I usually use a rough guide of 2 parts potatoes to one part equal mix of the rest of the ingredients. The olives plump up during cooking with the juices of the bird and the orange juice. May I just add, Yum? It's a good 'un.... for more appeal for the delicately palated, I recommend sacrificing olives for chili power. The bitterness of the olives might be a bit much for the faint of heart, but the heat, man, it's just pure love with turkey!
Stuff this one loosely tho, it's like cement if you pack it in This mix also makes pretty good deep fried potato balls.
Another one that really rocks is the above, sans olives, plus pomegranate
juice, garlic, and lemon instead of orange. Baste the bird on pomegranate
juice too for a deep rich red glaze, late in the cooking.
Best ever is a fiery honey and chili peppers glazed, sage and chipotle
