6 | lg | Pears; peeled & chopped |
3 | c | Sugar |
1 1/2 | tb | Ginger, fresh; grated |
1 | Lemon; thinly sliced |
Cook all ingredients in heavy 3-quart saucepan over medium heat, stirring often, 5-7 minutes, until sugar dissolves. Increase heat to medium-high and cook, stirring occasionally, 40 minutes, until thickened and golden. Cool. Refrigerate in airtight containers up to 1 month.
