To every pound of fruit allow the same weight of sugar and a cup of water.
Peel the fruit and cut into slices. Boil the rind in the water for 10 minutes, strain, add sugar, and boil the syrup 20 minutes, removing the scum as it rises. Put in the slices of pineapple, and boil 15 minutes. Next day pour off the syrup, boil it 20 minutes, put the pineapple into jars, pour the boiling syrup on the fruit, and cover the jars closely.
The preserve, if airtight, should keep 2-3 years.
