Title: Pickled Sweet Peppers and Onions

2 | lb | Fresh peppers, green, red, |

1 | md | Onion, sliced (red or |
White) | ||
4 | Garlic cloves, sliced | |
8 | Whole allspice | |
24 | Peppercorns | |
Bay leaf torn into quarters | ||
2 | c | Vinegar |
2 | c | Water |
2 | ts | Salt |
4 | tb | Olive oil |
Wash and slice the peppers. Slice onions. Pack into sterile jars. Into each jar, put garlice, 2 allspice, 6 pepperconrs and a piece of the bay leaf. Bring bring mixture to a boil. Pour over top. Pour 1 tbsp of oil over top, just using enough to completely cover peppers. Seal with two piece lids. Boiling water bath for 7 minutes. Store in cool dry spot.
