Title: Turnip Pickles

Yield: 3 Pints
3 | lb | Small turnips; peeled and sliced thin |
3/4 | c | Salt |
1/2 | c | Water |
Ice cubes | ||
2 1/2 | c | Sugar |
1 1/2 | c | Vinegar |
1 | tb | Mustard seed |
1 | ts | Turmeric |
1/2 | ts | Whole cloves |
Mix well turnips, salt, water, and about a quart of ice cubes. Cover with more ice cubes and let stand about 3 hours. Rinse and drain.
In a large saucepan bring to boil sugar, vinegar, seed, turmeric, and cloves, stirring to dissolve sugar. Add turnips; boil gently 8 to 10 minutes or until crisp-tender. Pack into hot pint jars; cap and process in boiling water bath 15 minutes.
