Title: My Version of "Hottest Sriracha Sauce"

Yield: 1 Quart
14 | oz | Applesauce |
12 | oz | Pineapple juice |
28 | oz | Tomato puree |
6 | Habanero peppers, ground | |
3 | Jalapeno peppers, ground | |
1 | tb | Chinese ground cayenne |
10 | Garlic cloves, ground | |
4 | oz | Vinegar |
More vinegar to taste | ||
Salt to taste | ||
4 | oz | Palm sugar (or brown sugar)~ |
My version of "Hottest Sriracha Sauce" using what was in the larder
Bring all ingredients except "to taste" ingredients to a boil. Cook until slightly thickened. Taste for seasoning. Add vinegar, sugar, and salt to taste. Cook a little longer and then let cool.
This is similar to the standard recipe, except that the real thing uses plum sauce or plum jam instead of applesauce and doesn't use as many hot peppers.

Mamma mia, atsa spicy sauce! Looks like a recipe for Inner Beauty the way they used to make it before it became sissy. Bill Zuccarello (whom I knew from RIME-Cuisine) and I went to East Coast Grill, Chris Schlesinger's first restaurant, and between us we did in approximately 5/6 of a bottle of Inner Beauty Real Hot Sauce. We could not have done this with the sauce you describe here.
