Title: Cucumber Dill Spread

Yield: 2 1/3 cups
16 | oz | Cheese, cream; softened |
2 | ts | Juice, lemon |
2 | ts | Onion; minced |
1/2 | ts | Dill weed |
1/4 | ts | Horseradish, prepared |
Sauce, hot pepper; dash of | ||
3/4 | c | Cucumber; seeded, finely diced |
In a mixing bowl, beat cream cheese until smooth. Add lemon juice, onion, dill, horseradish and hot pepper sauce. Fold in cucumber. Cover and chill for at least 1 hour. Serve with crackers or raw vegetables.
Diabetic Exchanges: One 2 tablespoon serving (prepared with fat-free cream cheese) equals 1 vegetable, 1/2 very lean meat; also, 45 calories, 240 mg sodium, 9 cholersterol, 4 gm carbohydrate, 4 gm protein, 0 fat.
