Title: Cucumber Dill Spread
Categories: Appetizer Diabetic
Yield: 2 1/3 cups

16ozCheese, cream; softened
2tsJuice, lemon
2tsOnion; minced
1/2tsDill weed
1/4tsHorseradish, prepared
  Sauce, hot pepper; dash of
3/4cCucumber; seeded, finely diced

In a mixing bowl, beat cream cheese until smooth. Add lemon juice, onion, dill, horseradish and hot pepper sauce. Fold in cucumber. Cover and chill for at least 1 hour. Serve with crackers or raw vegetables.

Diabetic Exchanges: One 2 tablespoon serving (prepared with fat-free cream cheese) equals 1 vegetable, 1/2 very lean meat; also, 45 calories, 240 mg sodium, 9 cholersterol, 4 gm carbohydrate, 4 gm protein, 0 fat.
