Title: Wild Duck a la Johnny Mathis

2 | Wild ducks | |
1/2 | c | Onion -- chopped |
1 | Green pepper -- sliced | |
2 | Celery stalks -- cut | |
3/4 | qt | Water |
Salt & pepper |
Clean ducks. Rub with salt and pepper. Place in baking pan, breast side up. Add onions, pepper slices, celery and water to pan. Cover and bake at 325~ for 2 hours, or until ducks are tender. Baste occasionally. Serve on a bed of wild rice.
