Title: Hawaiian Mardi Gras Cake

1/2cFinely chopped macadamia
  Nuts
1/2cButter
8ozCream cheese, softened
1 1/2cSugar
1 1/2tsVanilla
4 Eggs
2 1/2cAll purpose flour
1/4cAll purpose flour
2tsBaking powder
2cCandied chunk pineapple
1/2cCoarsely chopped macadamia
  Nuts
  Confectioners' sugar,
  Optional

Heat oven to 325 degrees. Grease a bundt pan, then sprinkle with finely chopped macadamia nuts. Blend the butter, cream cheese, sugar and vanilla. Add eggs, one at a time, beating well after each addition. Stir in 2 1/2 cups flour and baking powder. Combine the remaining 1/4 cup flour, pineapple and coarsely chopped nuts. Fold into batter. Spoon into prepared pans. Bake for 70 minutes. Cool 5 minutes and remove from pan. Cool completely. If desired, sprinkle with confectioners' sugar.
