Title: Samoset Resort's Baby Maine Au Gratin Potatoes

1/2 | lb | Bacon -- Diced |
1 | md | Onion -- Diced |
1 | md | Green Pepper -- Diced |
1 | lb | Velveeta Cheese -- |
Quartered | ||
4 | tb | Clarified Butter |
1/2 | c | Seasoned Bread Crumbs -- For |

Method: Simmer potatoes in salted water until 75% done. Cool and pat dry. Saute potatoes in butter until golden brown. Place in casserole dish. Saute bacon until 75% done. Add onion and peppers. Saute 2 minutes. Pour mixture over potatoes. Add cheese. Top with crumbs. Bake at 350 F until cheese melts and bubbles. Serves 4.
NOTE: Preheating saute pans, in most cases, can make foods stick to them.
