Title: Cajun Potato Salad - Taste of Home

2lbRed potatoes; small
1/2cRed onion; chopped
1/2cGreen onion; sliced
1/4cFresh parsley; minced
6tbCider vinegar; divided
1/2lbKielbasa; cooked & smoked
  Or cajun sausage sliced
6tbOlive oil; or vegetable oil
1tbDijon mustard
2 Cl Garlic; minced
1/2tsPepper
1/2tsCayenne pepper

Recipe by: Taste Of Home Preparation Time: 0:30 Cook the potatoes in boiling salted water for 20 to 30 min. or until tender; drain. Rinse with cold water; cool completely. Cut into 1/4 in. slices; place in a large bowl. Add onions, parsley and 3 tablespoons vinegar; toss. In a med. skillet cook sausage in oil for 5-10 min. or until it begins to brown. Remove with slotted spoon and add to potato mixture. To drippings in skillet, add mustard, garlic, pepper, cayenne pepper and remaining vinegar; bring to a boil, whisking constantly. Pour over salad; toss gently. Serve immediately. Yield: 6 servings.
