Title: Sauteed New Potatoes

Yield: 2 Servings
3/4 | lb | New potatoes, red or white |
2 | ts | Olive oil |
2 | tb | Water |
2 | md | Cloves garlic, crushed |
Salt and pepper to taste |
Wash potatoes, do not peel. Cut in quarters. Heat oil in a nonstick skillet on medium high. Add water and potatoes and saute 15 minutes, tossing occasionally to make sure all sides are browned and crisp. Add garlic and continue to saute 5 minutes. Add salt and pepper to taste.
Per serving: 202 calories, 4 g protein, 28 g carbohydrate, 5 g fat, 20 percent calories as fat, 4.1 g fiber, 0 mg cholesterol, 10 mg sodium. Exchanges: 0.2 vegetable, 2.2 bread, 0.9 fat
