Title: Potato Apple Soup

Yield: 4 Servings
1 | c | Onion; chopped |
1/4 | c | Celery; sliced |
1 | lb | Potatoes; peeled and cut into 1/2" slices |
1 1/2 | c | Chicken Broth |
1 | Apple; finely diced | |
1/4 | c | Fresh Dill; chopped |
1 | c | Half-And-Half |
Salt | ||
Pepper |
In a large saucepan, combine onion, celery, potatoes and broth. Place on stove top over medium-high heat and cook 15-20 minutes or until potatoes are tender. Turn off heat, then use mixing spoon to stir in apple and let mixture stand, covered, 5 minutes. Place mixture in blender or food processor and puree until smooth. Return mixture to saucepan, stir in dill and half-and-half and season with salt and pepper. Cook over low heat about 5 minutes, then serve immediately.
