Title: Potato Apple Salad

Yield: 4 Servings
1 | lb | Small Red Potatoes; cubed |
1 | Apple; peeled cored and cubed | |
1 | Stalk Celery; diced | |
2 | Green Onions; coarsely chopped | |
1/3 | c | Walnuts; toasted and chopped |
2/3 | c | Sour Cream |
3 | ts | Raspberry Vinegar |

Boil potato cubes in lightly salted water until just tender, 15 to 25 minutes; drain and cool. Combine potatoes, apple, celery, onions and walnuts. Plump raisins in boiling water for 3 seconds; drain and add. Combine sour cream and raspberry vinegar and a small amount of salt and pepper. Dress potato mixture with this; chill. Taste for seasonings.
