Title: Easy Potatoes Au Gratin

Yield: 8 Servings
2 | tb | Butter or margarine |
1 | c | Chopped onion |
2 | tb | Flour |
2 | c | Skim milk |
1 1/2 | ts | Salt |
1/4 | ts | Pepper |
24 | oz | Pkg frozen potatoes o'brien; |
Thawed | ||
8 | oz | Pkg shredded cheddar cheese; |
Divided | ||
Paprika -- optional |
Preheat oven to 350. Melt butter in meduim saucepan over medium-high heat. Add onions. Cook 3 minutes, stirring occasionally. Sprinkle with flour; cook and stir 1 minute. Add milk, salt and pepper; bring to a simmer, stirring frequently. Grease or butter an 11x7 inch baking dish or 1 1/2 qt shallow casserole dish. Layer half of potatoes in dish; spoon half of sauce over potatoes. Top with half of cheese. Prepeat layers with remaing ingredients. Sprinkle with paprika. Bake 30-35 minutes or until bubbly.
