Title: Powter Corn and Potato Chowder

Olive oil spray | ||
1/2 | c | Chopped onion |
1/2 | c | Chopped red bell pepper |
3 | c | Frozen corn, thawed |
3 | c | Vegetable broth |
1/8 | ts | Cayenne pepper |
2 | md | Potatoes, peeled, cubed and cooked til tender |
2 | tb | Chopped parsley |
1 | tb | Chopped green onion |
Saute the onion and the red pepper in a pot lightly sprayed with oil until the onions are very limp. Put 2 cups of the corn and 1c broth in a blender and process until smooth. Add the puree to the pot of onions and peppers. Add the cayenne pepper, potatoes and remaining corn and broth. Heat through, sprinkle parsley and green onions on top, and serve.
