Title: Potato Chip Shortbread Cookies

2 | c | Margarine, softened |
1 | c | Sugar |
2 | ts | Vanilla extract |
3 | c | Flour |
1 | c | Pecans, chopped |
2 | c | Potato chips, crushed |
2 | c | Confectioners' sugar or more |
Cream margarine, sugar and vanilla in mixer bowl until light and fluffy. Add flour; mix well. Stir in pecans and porato chips. Drop by teaspoonfuls onto nonstick cookie sheet. Bake at 350ø for 10 to 15 minutes or until golden. Sprinkle with confectioners' sugar. Cool on wire rack. Prep Time: 10 minutes plus baking
