Title: Potato Chip Cookie

3/4 | c | Margarine |
3/4 | c | Sugar |
1 | Egg yolk | |
1 | ts | Vanilla or almond extract |
1 1/4 | c | All purpose flour |
3/4 | c | Crushed potato chips |
3/4 | c | Pecans, chopped fine |
3 | tb | Sugar for dipping |
Pecan halves for tops |
Preheat oven to 375 degrees. In large bowl cream margarine, sugar, egg yolk and extract until fluffy. Add flour, potato chips and nuts and mix well. Form into 1 1/2-inch balls and place 3 inches apart on ungreased cookie sheet. Grease the bottom of a glass, dip greased glass in sugar and use to flatten cookie. Place a nut half on top of each cookie. Bake 8 to 10 minutes. Let cool slightly, removing from pan, then cool on a wire rack. Makes about 3 dozen cookies.
