Title: Swedish Potato Pancakes (Rarakor)

4 | lg | Firm potatoes |
3 | tb | Minced fresh chives |
1 1/2 | ts | Salt |
1/8 | ts | Pepper |
2 | tb | Butter or margarine |
2 | tb | Vegetable oil |
Peel potatoes and place in bowl of ice cold water to cover. Drain and shred potatoes quickly in a food processor. Add chives and mix. Sprinkle with salt and pepper, mix again.
Over high heat, put butter and oil in a large heavy skillet and when very hot, drop 2 tablespoons of potato mixture in for each pancake, pressing down with pancake turner. Fry until golden brown and crisp, turning only once. Keep hot in a 300 degree F oven. Serves 6
