Title: Herring and Potato Casserole

1 | lg | Onion, sliced |
2 1/2 | tb | Butter |
3 | lg | Potatoes; peeled and thinly sliced |
2 | Herring fillets; cut into half-inch diagonal slices | |
Freshly ground pepper | ||
1 | tb | Bread crumbs |
1/3 | c | Light cream |
Preheat oven to 400.
In frying pan, saute onion in 2 tbsp butter until translucent.
Cover bottom of buttered, 3-quart baking dish with a layer of potatoes. Add a layer of herring fillets, and then a layer of onion; season each layer with pepper. Continue alternating layers until all ingredients are used; end with a layer of potatoes.
Sprinkle the top of the casserole with bread crumbs and dot with remaining butter.
Place cream in saucepan and heat almost to a boil (but don't boil it.) Pour hot cream over casserole. Bake for 1 hour or until potatoes are tender. Serve hot.
