Title: Tartar of Smoked Salmon on Rye Barquette

1lbSmoked salmon minced by
  Hand
1tbCapers
  Juice of 1 lemon only
1tsMinced onion
1 Egg white
1/2tsFresh chives finely chopped
30 Barquettes-boat shaped
  Pastry

MIx well minced salmon, capers, lemon juice, onion, egg white and chives and portion into 30 equal parts. Top barquettes and serve. If barquettes are not available, use round 1 inch croutons or similar cracker as base.
